Healthy Pad Thai Noodles

Pad Thai noodles, noodles, thai noodlesThere are a lot of healthy food options. You can make noodles with a spiralizer (World Cuisine Tri-Blade Plastic Spiral Vegetable Slicer) from: butternut squash green or red cabbage, carrots, turnips, zucchini, young coconut pulp, or just use kelp noodles! Spiralize the vegetables into noodles or cut them up. 

Pad Thai Sauce:

1 Cup Coconut pulp,
1/2 Cup Coconut water,
1/2 Cup unsoaked Macadamia nuts,
1/4 Cup filtered water,
1/2 T hing,
1/8 Cup lime juice,
1 t apple cider vinegar,
1/2 t Himalayan sea salt,
1/2 t ginger,
1/4 t cayenne,
1/4 t black pepper.
 
Preparation: Process all ingredients in blender until smooth. Mix with noodles. Garnish with chopped vegetables. For example: sugar snap peas, sweet peppers, carrot, cauliflower, broccoli, cilantro, and sesame seeds, hemp seeds
